Mexican Swiss Steak

Many people are trying to cut down on carbohydrates so I had originally thought about making a beef roll stuffed with riced cauliflower that had been made into “Spanish rice” and smother the roll in red enchilada sauce.

The round bone steak that I had turned out to not be suitable for a roll so I regrouped and decided to just brown the steak and braise it in the enchilada sauce.  By chance, the meat wrapper from the butcher was labeled “Swiss steak”, so ….. Mexican Swiss steak with a side of riced cauliflower “Spanish rice” and avocado salad.

Ingredients

Round steak cut into serving sizes pieces (tenderized)

Chopped onion

Chopped green pepper

Red enchilada sauce

It turned out to be really good!  The onion and green peppers smoothed out the enchilada sauce.  It was really a fusion of Mexican flavors and Swiss steak.
