When you are away from home for an extended period of time, it’s not uncommon to want some comfort food that reminds you of home. When I was in Saigon I wanted an American Hamburger with yellow mustard. That I could find at Burger King, but it wasn’t the comfort that I craved.
I tried making American style Chicken Noodle Soup, but finding an Asian noodle that is similar to an American Style Egg Noodle was a challenge. If I had seen season 1 of Mind of a Chef, I would have tried Ramen noodles.
One of my ex pat business associates was raving about Ashima Mushroom Hot Pot . I was set to head back to the U.S. for a couple of weeks, so we decided to try it out before I headed to the airport.
The Mushroom Hot Pot is so very very good!!! This was the perfect Asian substitute for American comfort food!
When you order the Hot Pot you pick 5-6 different varieties of mushrooms and whether you want beef in addition to the mushrooms.
The server brings out the hot pot full of a steamy aromatic broth and puts it on the burner in the center of the table to keep it at a simmer. The aroma makes your mouth water.
The server then adds the mushrooms in the proper order so that they end up being cooked perfectly. At the end she adds very thinly sliced beef.
I went back several times when I was in Saigon. The umami and love just made me feel so good.
I love soup. It is a whole meal in one bowl and has the potential to make me feel so good.
